Sunday Funday Recipes

Sunday Funday!

by Kendra Gilbertson

Before kids, Saturdays were meant for tailgating and college football and Sunday Funday meant heading to the bar to watch the NFL games. Though our weekends are filled with more kid-friendly activities, we still try to catch as much football as possible. One thing I do not like doing on the weekends is cooking, so I’m here to share some easy and tasty recipes that are great for game day!

Buffalo Chicken Dip

What you’ll need:

4 chicken breasts
8 oz of Ranch dressing
8-10 oz of Frank’s Buffalo sauce, depending on how much kick you like
2 cups shredded cheddar
8 oz (very soft) cream cheese

Directions:

Cook the chicken and shred. I use my KitchenAid mixer to shred the chicken on a low speed. Soften the cream cheese in the microwave. Combine all ingredients into a mixing bowl and mix. Pour ingredients into a greased baking dish. Cook for 30 minutes at 350 degrees or until it’s bubbling. I usually serve this dip with celery sticks and tortilla chips. This is a staple in our household, we love it!

Meatballs

What you’ll need:

2 pounds of meatballs (I usually go for the bags of frozen meatballs, no judging)
1 jar of grape jelly
1 jar of Heinz chili sauce

Directions:

Heat grape jelly and Heinz chili sauce in a sauce pan on high until sauces are melted. Add meatballs into the pan, reduce heat, and cook through. Once the meatballs are cooked and coated in the sauce, transfer the meatballs into a slow cooker and keep warm. This is a quick and easy appetizer for game day, as well as parties.

Pizza Pinwheels

What you’ll need:

1 can of Pillsbury crescent rolls
1 package of pepperoni
2 cups of mozzarella cheese
Your favorite pizza sauce

Directions:

Break the crescent rolls into four rectangles, laying flat. Spread a spoonful of sauce onto each rectangle. Layer the pepperoni and top with the mozzarella cheese. Roll up each rectangle, slice, and place on a greased pan. Bake at 375 degrees for 12 minutes or until golden brown. Serve with the additional pizza sauce.
